Leon McTaggart, 29, was found guilty of grievous bodily harm after knifing Narinder Sidhu, 51, in Oldbury last November.
McTaggart is currently in jail on remand and was due to be sentenced today at Wolverhampton Crown Court.
A report received from the jail said he was unwilling to come out of his cell this morning.
The case was adjourned because a pre-sentence report ordered by the court had not been prepared in time.
McTaggart is now due to be sentenced on July 28.
